How to make Mango Chutney

  1. Wash and peel the mangoes, then grate them into thin strings.

  2. In a pan, combine the grated mangoes and sugar. Cover the pan with a lid and set it aside for 30-40 minutes, allowing the sugar to dissolve and the mango to release its juices.

  3. Next, transfer the mango and sugar mixture to a heavy-duty wok or pan over low heat, and begin cooking the chutney. Keep stirring at regular intervals.

  4. Allow it to cook for 10-15 minutes until the sugar fully dissolves and the chutney acquires a glossy, glass-like appearance. At this point add salt, spices and raisins to the chutney.
